Mini Chocolate Fudge Cakes Recipe

One of the favourites in this house in my Chocolate Fudge cake, it is always very welcomed with a splash of cream too ( you can also try it with ice cream) .

I was about to make it for the boys, but instead I decided to make individual mini Chocolate Fudge Cupcakes. They were a winner! I think they even prefer these.


3 tbs heaped cocoa powder
180g Unsalted softened butter
125g Soft Brown Sugar
4 Large Free Range eggs
160g SR Flour
A pack of Fudge


Preheat the oven to 160 c/320f/gas 2, using a food processor, add the butter, sugar, cocoa and whiz until it is smooth.Then you need to add in the eggs, crack one at a time, add the flour and again whiz until smooth.

Place 12 cupcake case’s onto a baking sheet, using an ice cream scoop, evenly distribute the mixture into the case’s .

Get a few of the pieces of fudge, chop them into pieces and push the pieces into the cake mix.

Bake for 20 mins or until a toothpick comes out clean.

You can either serve like this, with cream, whipped cream, ice cream or you could whip up my fudge frosting with fudge pieces.
